The black truffle of the Périgord is a magic mushroom that has the gift of sublimating dishes with its subtle flavor: a risotto or an omelette with pieces of black truffles, or a pâté de Périgueux accompanied by a glass of Monbazillac...

There are four species of truffles appreciated by the most demanding palates. In the Dordogne-Périgord, the tuber melanosporum or black truffle of the Perigord is traditionally sought, eaten and used.

From December, all local production of fresh truffles is present in the 12 controlled markets that exist. Thus, in Sorges, Périgueux, Excideuil, Sarlat, Brantôme, Saint-Alvère and Thiviers, you can buy that premium product.

This underground mushroom requires a very special harvesting technique in which a "truffle" animal is used. The search with a sow still has its followers, but the trained dog is the most widely used method in the Périgord today. Truffle growers will invite you to join them in digging, in the company of their truffle dogs.

If you are interested in the gastronomy and black truffle of the Périgord, visit the truffle eco-museum in Sorges (historical, agricultural, scientific and gastronomic aspects). You can also participate in the truffle fair in Sarlat or Sorges.
