Taste Provence this weekend and make a Ratatouille

Ratatouille! A dish so typical of France Disney made movie. This Provençal vegetable dish, originated in Southern France in the 18th century. The dish is made perfect by the sun kissed fresh vegetables which create strong and delicious flavours. Enjoy the sun this weekend and treat yourself to this wonderful dish!

Ingredients

Serves 4 4 small courgettes 2 aubergines 2 red peppers 4 large tomatoes 4 tbsp olive oil 2 onions, chopped 2 garlic cloves, crushed ½ tsp sugar Salt and black pepper Small bunch basil

Method

Step 1: Cut your aubergines into quarters lengthways. Now cut these quarters roughly into 2.5cm/1in slices. Cut your courgettes roughly into 2.5cm/1in slices. Remove the seeds from the peppers dice them into bite sized cubes.

Step 2: Score a cross in the base of each tomato and place them in a heatproof bowl. Pour over boiling water so the tomatoes are covered. Leave this for one minute. Now drain the water and set the tomatoes aside until they are cool enough to touch. Peel off the skins. Cut them into quarters, scoop out the seeds and discard. Roughly chop the flesh.

Step 3: Heat the oil in a flameproof casserole dish and add the onions. Cook over a gentle heat for 8-10 minutes, stirring occasionally, until golden-brown and very tender. Add the aubergines and courgettes, increase the heat slightly and cook for 2-3 minutes. Stir in the peppers, garlic, sugar, some salt and pepper and half the basil and mix well. Cover and cook over a very gentle heat for 20 minutes.

Step 4: Add the tomatoes to the pan and cook for a further 10 minutes. Scatter with the remaining basil and serve.
